When it is over 100 degrees out and I want some fresh bread, out comes the bread machine.  I had a banana that was nice and ripe, and dug around in a cupboard and found some dried cranberries.  I figured I would mix the two together and see what happened.  

The fact that half the loaf vanished shortly after I sliced it up might be a bit of a clue that it came out fantastic.  Because I used yeast, the bread came out super fluffy, with a hint of sweet and tart from the bananas and cranberries.


1 1/4 cup water
2 tablespoon softened butter
1 super ripe banana
1 cup dried cranberries
1/2 cup sugar
1 1/2 teaspoon salt
1 teaspoon cinnamon
3 3/4 cup flour
1 packet yeast 1/4oz (2 1/4 teaspoon)

Place water and butter into bread pan.  Break banana into 4 sections and add to bread pan, along with dried cranberries.  Add sugar, salt, and cinnamon to bread pan and top off with flour.  Using finger, make a well into the flour and add yeast, making sure that yeast stays dry.  Place bread pan into bread machine, close lid  and use sweet bread setting.  The banana in this recipe is a bit of a wild card with moisture, so watch as the dough is mixed and add flour or water a teaspoon at a time as necessary.  The consistancy should be a slightly tacky ball of dough.  Let the machine finish with the proofing and baking of bread.  Remove from machine when done, let cool, remove paddle, slice and enjoy.
