Always Room for Cookies and Milk #a2Milk #IC

Cookies and milk is a thing at my house.  Actually, milk in general is a thing in my house since I go through 2-3 gallons a week, and that is down from the 3-4 a week when my older daughter was still home.  While no one in my immediate family has tummy troubles when we drink milk, we do have extended family with food allergies or dietary restrictions, and I try to keep up with the most basic of understandings of each issue.  This includes extended family that avoid dairy products for a variety of reasons. There is an independent study out that shows that 1 in 4 people have discomfort after drinking milk, though only 5% - 7% of the population has been clinically diagnosed with lactose intolerance.

2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1 stick (1/2 cup) butter, room temperature
3/4 cup sugar
2 eggs
1 tsp rum extract
favorite jam

Preheat oven to 350.  In large mixing bowl cream together butter and sugar.  Add eggs and rum extract and mix together.  In separate bowl sift together flour, baking soda, salt, cinnamon and nutmeg.  Slowly add four to butter and mix until combined.  The dough will be on the thicker side.  Roll about 1 teaspoon dough into a ball and place onto cookie sheet.  Use your thumb or the end of a large wooden spoon to make a thumbprint dent into the center, then add about 1/4 teaspoon of your favorite jam to the center.  Bake for 12-14 minutes and let cool before moving to cooling rack.
