My daughter requested a cheesecake covered with whipped cream for her birthday. Easy enough right? For some unknown reason I decided to try a new cheese cake recipe off the internet instead of following the tried and true recipe that comes in the brand name cream cheese brick packages. I ended up with plate tectonic sized cracks on the top of the cheese cake.
My solution was a chocolate ganache to fill in the cracks and smooth out the top of the cheesecake. Of course I did not have whipping cream, or even semi-sweet chocolate chips on hand, but I figured I would make do with what I did have, sour cream and bittersweet chocolate chips. This ended up being a perfect filler for the huge cracks in the cheesecake, and a great taste compliment to the sweet of the cheesecake and whipped cream. The chocolate ganache did not taste at all like sour cream
1 cup sour cream
1.5 cups bittersweet dark chocolate chips
1 teaspoon vanilla extract
Place chocolate chips in large microwave safe bowl and set to 10 seconds at a time, stirring after each 10 second, set until chocolate is smooth. Add vanilla extract and sour cream and mix together with spoon or spatula until smooth, this may take a couple of minutes. Spread on top of cheesecake, cake, or whatever it is you want to cover while it is still warm, and refrigerate for at least an hour before serving.
