My daughter and I tend to bake at pretty random times, and it never fails that I do not have any frosting on hand for cupcakes or cakes.  I do always seem to have everything on hand to make some frosting from scratch though.  This recipe will made more than enough to cover 24 cupcakes, and you might even have some left (unless you do mile high frosting on your cupcakes).

1 Cup shortening (room temperature)
4 cups powdered sugar
1 tsp butter flavor extract
1-2 tsp water as needed to thin out frosting

Place all ingredients into mixing bowl and start with slowest speed to mix ingredients.  Slowly increase speed up till at highest setting and whip for 5-8 minutes until fluffy.  If frosting seems thick add water 1 tsp at a time to thin as needed.

If you want to get a little fancy, take some gel food coloring and smear it inside a piping bag then add frosting.  You will end up with two tone frosting while piping.
