I love Chicken Salad and always make an extra chicken breast when I'm cooking just so I can have one to make chicken salad with.  The great thing about chicken salad is all the ways to customize it to your own preferences, or use whatever vegetables, condiments, and some people even use some fruits on hand to make it.  A very basic chicken salad has chicken, mayonnaise, and celery, everything past that is all about personal preference.



Here is how I usually make my chicken salad.

Ingredients:
1 cooked chicken breast, chopped
1/2 cucumber diced
1/2 green pepper diced
2-3 tablespoon mayonnaise
1 tablespoon mustard
1 teaspoon creamy horseradish
1/2 teaspoon paprika
Salt & Pepper to taste
1-2 tablespoon cilantro, chopped




Directions:
Place all ingredients in large bowl and mix together.  Taste test and add seasonings and condiments to preferred taste and creaminess.  If possible, cover and let sit in refrigerator for an hour or two so the flavors blend, but can be served immediately.  Some fun mix ins are raisins, cut grapes, strawberries, baby spinach, sour cream, and even pepperchinis.  Serve as stand alone snack, on some crackers, in a tortilla, or as a sandwich with some lettuce and cheese.
