I love cheesecakes, but hate having to heat up the house for them.  No bake cheesecake is perfect for when the crave hits you in the middle of summer.


2 - 8 oz bricks Philadelphia Cream Cheese Bricks
1 - can sweetened condensed milk
1 1/3 cup melted butter
2 packages of chocolate graham crackers
1 tsp vanilla extract


Place chocolate graham crackers into large resealable bag and use a rolling pin to crush crackers into fine crumbles. Place graham cracker crumbs into a bowl add in melted butter and stir till well combined. Transfer crumb mixture into large spring form pan, or large pie dish, and press along bottom and roughly 1 inch up the sides (or top of the pie dish). Place in refrigerator for 10 minutes to chill.


 In large bowl mix cream cheese until smooth. Slowly add in condensed milk, then vanilla scraping down sides as necessary. Pour filling into chilled graham cracker crust and smooth top with spatula. Chill in freezer for a minimum of 2 hours before serving.
I sprinkled some sugar and brown sugar on the top of mine and hit it with a butane torch to caramlize it.
