I love pineapple, but when my mom gave me two, I knew I better freeze one before it ended up going bad.  Having frozen pineapple chunks around is great for smoothies, or to add to some plain water.  Make sure you have some freezer space for this.  I was busily moving stuff around just to be sure I had room to slip the pineapple chunks in to freezer.

Ingredients:
Pineapple chunks (fresh)
Parchement paper
Cookie Sheet

Directions:
Line cookie sheet with parchement paper, then place pineapple chunks, leaving enough room for air to circulate between pieces.  Place in freezer for 3-4 hours (mine was left in overnight).  When fully frozen quickly place chunks into freezer bag for storage.  Pieces will be frozen enough to not stick together when placed in bag, so you can easily take out a few chunks at a time as needed.
