Some days it's just not worth turning on the oven for pork chops. I was feeling adventurous food wise, and threw some pork chops into the slow cooker. What came out was incredibly flavorful and tender. I have to remember this in the middle of summer when it's too hot to cook.
2 thawed pork chops
spicy brown mustard
herb grinder (or salt and pepper)
Place chops into slow cooker. Spread some brown mustard on top of each pork chop. Season with herb grinder or salt and pepper. Top with Parmesan cheese and cover with lid. Turn on slow cooker to low and let cook for 4-5 hours. I waited until almost all of the moisture was gone from the bottom of the slow cooker. Pork chops were easily separated from the bone and very moist. I served mine with some saffron rice and sauteed Chinese broccoli.
