I have loved fried egg sandwiches forever.  They are quick, easy and just a lot of yum.  This is just a basic sandwich, but there are so many ways to add some extra flavor by adding catchup, salsa, avocado slices, or some pepper jack cheese.  I used a slice of Swiss because it was the first thing I grabbed out of the fridge.


Ingredients:

Two slices toasted bread
Mayonnaise
Egg
Cheese slice
Salt & pepper to taste
Cooking oil

Directions:

Spread mayo on toast and add a slice of cheese to one, or to both it you like extra cheesy.  Heat some cooking oil in a small skillet over medium high heat.  When oil is hot (sprinkle just a tad of  water, if the water skitters and pops, the oil is hot).  Carefully crack and add egg to pan.  Add some salt and pepper if desired.   Let cook for a minute or two and pop the yolk.  Carefully flip egg and cook for another minute or two.  Place fried egg onto toast with cheese and then place other slice of toast on top.  Gently press together, and let cool just slightly so you don't burn yourself while devouring.
