Sweet potato balls are a family tradition here around the holidays. They came about when my step-dad came into the picture, they were a family tradition for him while growing up. Well 20 years later and they are still a hit. Even the kids love them, as they have a ooey gooey marshmallow in each one. Now I put specifics on which brands to use, you can use any brand for the sweet potatoes and coconut but we have found over the years that everything seems to blend and taste better using these.


4 cans of Bruce's Sweet Potatoes
1 bag of Baker's coconut
1 bag of large marshmallows 


Preheat oven to 350 degrees. Pour the cans of sweet potatoes in a pan on the stove on low heat. Stir very frequently until they are warm. Don't heat using higher heat as the bottom will burn and it will ruin the taste. Once warm take a marshmallow in hand and pat sweet potatoes around them making a ball. Place in a baking sheet 9x11 or bigger. Repeat until all balls have been formed. Sprinkle coconut over each ball, and bake in oven for 15-20  minutes or until coconut is golden brown. Don't cook them too long or the marshmallows will disappear.
