Corn Casserole is a recent discovery for my family, and now we just can't get enough of it.  I did not have any cheese, but had some cream cheese and decided to make a go of it.  Turned out fantastic with a mild flavor and a creamy texture, and everyone in the family loves cream cheese. I like that everything can be dumped into the baking dish, mixed together and then baked.  No extra dirty dishes.


1 can corn, drained
1 can creamed corn
1 package cream cheese, room temperature & cubed
1/2 cup corn meal
salt & pepper to taste
8x8 or 9x9 baking dish

Preheat oven to 350.  Mix all ingredients together and place in baking dish.  You might have to work on getting the cream cheese evenly through the dish.  Bake for 30 minutes, then serve.  How easy is that??
