With my daughter all excited about culinary class, she came home and happily made Roasted Potatoes as a side for dinner one night.  I'm slowly getting better about just leaving her in the kitchen to do her own thing.


8-10 Potatoes
Olive Oil (2-3 teaspoons)
1/4 teaspoon Salt
1/4 Dill
Parchment Paper
Cookie Sheet


Pre heat oven to 400.  Peel and rinse potatoes.  Cut potatoes into 4 pieces length wise, then cut each slice in half.  Place potatoes into large bowl and add olive oil (just enough to coat potatoes) dill, salt and pepper.  Mix together then place a potatoes in a single layer on a parchment lined cookie sheet.  Place in oven and back for 10-15 minutes.  Rotate cookie sheet 180 and continue to back for 10-15 minutes.  Potatoes are done when edges and sides start turning a light golden brown.  Leave potatoes in oven for an extra 5-10 minutes for extra crunch.
