While I was visiting with my aunt, we went to one resturant that had a watermelon fresca.  With unlimited refills, I went crazy drinking this stuff up during dinner.  My daughters already love watermenlon, so of course I had to make it when I came home.  Thankfully it is quick and easy to make.  I prefer seedless watermelon for this so I don't have to bother taking time to take all the seeds out.


Fresh mint leaves


Cube watermelon and place chunks in blender with 6-10 mint leaves.  Blend until watermelon is smooth.  This actually took a little longer than I though it would.  My first round of doing this I had some watermelon chunks and pretty large mint leaves in my glass.  I would let it run for at least 30 seconds on a high speed to get that smooth liquidy texture.  Best served chilled.
