My mom planted a small garden this year and ended up growing some monster sized zucchini. She had way more that she could eat and ended up giving me a few of them.  I love zucchini and one of my favorite ways to serve zucchini is quickly sauteed with some butter and garlic, then served over rice.  It's quick, easy, and oh so tasty.  I love the robust taste of garlic, so if you like a more subtle garlic flavor, reduce to 1/2 teaspoon.


1 - 2 zucchini cut into bite sized pieces
1 tablespoon butter
1 teaspoon minced garlic
salt & pepper to taste


 Melt and heat butter over a medium high heat.  Add garlic and stir to quickly cook.  Add zucchini and stir occasionally until cooked but still crisp but cooked.  Serve over rice.  For a flavor twist, use 1/2 teaspoon use lemon pepper instead of garlic.
