Cheesy Bacon & Egg Breakfast Bites #Recipe

Quick, easy, and customizable, I love making breakfast bites before road trips, or even just to have on hand in the morning for my girls to be able to grab-n-go for breakfast, or to take to school for lunch.  With the theme for this month being bacon, this was a no-brainer recipe.  I've found that two eggs for every three breakfast bites is your best bet for not having the cupcake pan too full.  By the time you add in all the other ingredients they will fill up nicely.


4 eggs
2 table spoon milk
6 teaspoon cooked, crumbled bacon
2 tablespoon sharp Cheddar cheese
Salt & pepper (or favorite seasonings) to taste
Cooking spray, butter, or oil to grease cupcake pan


In medium sized bowl whisk together eggs and milk.  Mix in cheese, seasonings, and bacon.  Grease cupcake pan then pour egg mixture evenly into each well.  Bake for 15-18 minutes.  Eggs will puff up like a souffle, then deflate as they cool.

Because I my younger daughter is now a vegetarian, I left the bacon out of the mixture and added it to some of the breakfast bites after I poured it into the pan and before I shoved it into the oven.  Really no extra work and every one is happy.
