I think Bacon Fried Rice is hands down hubby's favorite dinner.  I like it because it is quick and easy.  My youngest daughter does not eat meat, but it is easy enough to toss together the eggs and veggies with the rice, let her grab her portion for dinner, and then mix in the bacon for everyone else.  It's much easier than making two seperate meals for the family.  I oldest daughter that suspects she has a gluten intolerance, so I used gluten free soy sauce.


2 cups dried rice
1 lb cooked bacon bits
1 cup mixed vegetables (frozen, fresh, or a drained can)
4 eggs
3 tablespoon soysauce
salt & pepper to taste


Cook rice according to directions on package in large pot.  In large frying pan cook bacon till crispy.  Drain off excess oil and place bacon on to paper towels to drain off excess grease.  I prefer to cut my bacon before frying, but you can cook whole slices and crumble after.  Return pan to stove over medium heat.  Add vegetables and eggs.  I'm lazy and do not bother scrambling the eggs first.  Add salt and pepper, and mix until eggs are scrambles/cooked and veggies are cooked (or heated if using canned).  Once rice is done, fluff with fork and add soysauce, stirring to cover most of rice with soy sauce.  Three tablespoons was my best guess as I buy the stuff by the gallon and pour directly out of the jug.  Mix in vegetables and bacon.  Do a quick taste test and add soysauce, salt or pepper as needed.  Serve as a side dish or a main meal.

Hubby loves the flavor of this, I like that it's not very greasy and my daughters end up eating veggies they both say they don't like.
