Apple Spinach Salad w/ Raley's Honey Vinaigrette #RaleysTryIt #GotItFree

Raley's is a local store in my area that has a neat program that I signed up for called Something Extra Try-It.  I fill out a profile survey, and then wait for opportunities to try different grocery products for free or at a greatly reduced price.  I qualified to try Raley's Honey Vinaigrette Dressing for free in exchange for my honest opinion.


I am a blue cheese and ranch kind of girl, but I had a spinach salad over at my friends house some months ago that I just loved, as did my two daughters, both of whom do not like raw spinach.  I figured I would go ahead and make the salad with this dressing and see how it turned out.  The dressing itself is tangy and sweet and I think would taste pretty good as a dip for veggie sticks and even bread pieces.  I took a quick look at the pretty short ingredients list and knew immediately what everything was.  I assembled my salad and presented it to my daughters for lunch.  They. Chowed. Down.  I had to yell at both of them to leave me some, and even then, I did not get a lot.  The Honey Vinaigrette Dressing was the perfect match to go with this sweet and salty Apple Spinach Salad.

Ingredients:
1 bag baby spinach
2 oz feta cheese
1/2 cup glazed pecans
1/4 cup dried cranberries
1 apple cut into bite sized pieces
1/4 cup cooked, crumbles bacon
Honey Vinaigrette Dressing to taste

Directions:
Place all ingredients in a large serving bowl and mix well.  serve as light meal or side salad.

My youngest daughter does not eat any meat, so I will toss everything together, take a portion from her, then add the bacon in and toss again.  I've made this salad several times, and every time there are no leftovers.

I really like how the salty taste of the bacon and feta mix with the tangy taste of the dried cranberries and the sweetness of the apples and glazed pecans.  The apples and glazed pecans give it a very satisfying crunch.  The Honey Vinaigrette just adds to flavor experience.
