Sunday morning tradition around here is my oldest daughter making pancakes for the family.  She's has become a pro at pancakes the last couple of years, and is starting to play around with the batter and adding in different flavors.  With this month's challenge being herbs and spices, she asked me what would happen if she added some cinnamon and nutmeg to batter.  I told her to add some and find out and warned her not to use too much nutmeg.  Her pancakes came out full of flavor that everyone loved.



Ingredients:

Favorite Pancake Mix for 4 People
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Mix up your favorite batch of pancake mix for four people and add in cinnamon and nutmeg.  Our boxed mix favorite is Bisquick, and my daughter makes the batter for 14 pancakes.  Pour about 1/4 cup of batter onto pre-heated greased pan or griddle.  I like my pancakes to cook slow and have the burner on a medium heat.  Cook until the edges are dry and the bubbles pop, but do not fill in with more wet batter.  Flip pancake and cook until golden brown.
