Muffins are a easy grab and go breakfast or snack when it's busy mornings especially with school back in again. I usually make them the night before as the kids start arriving at 4 am to wait and catch the bus at my house. That early in the morning cooking is not on my list of things I want to do. Blueberry and chocolate are common but the kids wanted something different. The kids love oatmeal but won't eat it on hot days, so I decided to make their favorite flavor oatmeal into a muffin: Cinnamon Brown Sugar.


2 Eggs
1 cup all-purpose flour
2/3 cup light brown sugar
1/2 cup oil
1/2 cup milk
3/4 cup instant oatmeal
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
pinch of salt

Pre heat oven to 400 degrees; In a bowl whisk eggs, brown sugar, oil and milk until smooth. Stir in flour, oatmeal, baking soda, baking powder, salt and cinnamon. Let ingredients sit in the bowl for 10-15 minutes to allow the oatmeal to soak up the wet ingredients. Grease a 12 muffin cup pan. I used spray instead of butter. Fill the muffin cups 1/3 to 1/2 of each cup and place in oven. Bake for 15-20 minutes, you want them golden brown.

* Add in 1/4 tsp. of nutmeg for more flavoring.
