I wanted some sort of Chinese Food for dinner but did not want to put a lot of effort into it.  Digging into the freezer, I decided to make a quick version of Broccoli Chicken over rice.  It came out pretty good.  Hubby went back for seconds and was impressed it cooked up so fast.  I threw the frozen chicken tenderloins into the microwave for a minute to soften them up just enough to cut into thin strips.  I find it harder to cut the tenderloins into thing strips when the chicken is fully thawed.


Ingredients:

4 chicken tenderloins
1 teaspoon cooking oil
2 teaspoon vinegar
1 teaspoon garlic salt
16 oz frozen broccoli
1 can condensed tomato soup ~ 10 3/4 oz.
4 teasoon soy sauce
Enough cooked rice for your family






Directions:

Heat oil in large skillet over medium high heat.  Add chicken and stir fry until a golden brown.  Add vinegar, garlic salt, tomato soup and sousace.  Mix together and bring to a boil.  Turn down heat to medium and stir in broccoli.  Cook untill brocolli is tender, but still crisp.  Serve over rice.  If you want to add a little heat, add a few dashes of ped pepper flakes when you add the tomato soup.
