Parmesan potatoes are a clash of many recipes that I have added and tweaked over the years. I started fixing these potatoes about 10-12 years ago and the family loves them.  Let me be honest here I always throw some of this and that and yep that looks about right. So sharing this recipe meant I had to put my this and that's into measuring form. I know I'm not that only cook that uses that technique, So please add, subtract, tweak whatever you need to make it to your family's liking. As I never fix it exactly the same every time. Depending on the occasion I may go lighter on some seasonings for stomachs that may upset easier. Or go heavier if we want the added heat kick. Fix it by recipe the first time and then play with it. Make it your own and I hope you enjoy it as much as we do. They go great with fried pork chops or BBQ chicken.


Ingredients:

6 medium size potatoes or 8-9 smaller ones
1 cup Parmesan cheese
2 tablespoons of oil
1 tsp. basil
1 tsp. paprika
1 tsp. parsley
1 tsp. onion powder
1/4 tsp. chili powder
1/4 tsp. oregano
1 1/2 tsp. garlic powder







Pre heat oven to 400 degrees. Rinse potatoes and peel and dice them. In a large mixing bowl add potatoes and oil and toss, this is to evenly cover all potatoes so seasonings stick to them. Combine all ingredients with potatoes and toss/mix well. On a foiled baking sheet, lightly spray with cooking spray and spread potatoes onto pan. Do your best to keep potatoes all one level and not piled up on one another. Cook in oven for 45-50 minutes or until potatoes are tender and edges are lightly brown.
