There are many ways of cooking chicken, which I'm thankful for. In my house I have 2 members that can't eat other meats so chicken is cooked a lot. Even with that I get bored fixing chicken the same ways every time. So taking some other recipes and switching out items for what the whole family can eat, we came out with this delicious chicken meal. With 30 minutes from start to finish, it was a fast but very fulfilling meal for all to eat. 


Ingredients:

4 chicken breasts
2 cups of water
2 cups of rice
 taco seasoning
2 cans of corn
2 tablespoon oil
1 cup medium salsa



On medium heat add oil to pan, place chicken in pan and sprinkle taco seasoning over chicken, cook for 5 minutes and flip, sprinkle with taco seasoning and allow to cook another 5 minutes or until there's no pink in chicken. While chicken is cooking, in a pot boil 2 cups of water, once boiling add 2 cups of rice, stir and sit aside off heat; cover with towel or lid. Cut chicken into strips when done cooking. Add in corn, and salsa and let cook for a few minutes allowing everything to get hot. Stir and mix well. Serve on a bed of rice. Serves 4-5 servings.
