Baked potatoes are a must in my family with many different ways of fixing and topping them. For this month it's clean eating month, and I took it as meaning nothing processed. Well truthfully, this month was extremely hard for me and my family to create. With really no ideas on what to do, packing, moving, unpacking and vacation for a week or so, it's been super crazy here. Bobbie gave me the month off but I had to share this easy potato with you fans. Of course you could dress it up ,but to keep it simple and clean I did the minimal. They went great with BBQ chicken and some veggies or replace them with fries when it's burger night.


Several large potatoes (depending on how many you are fixing for)
Olive Oil
Sea salt/pepper

Pre heat oven to 425 degrees, Rinse potatoes off and cut slits starting from end and working way to other end. Making sure to cut just about through the potato but leaving a tiny bit left so it doesn't cut it off. After all potatoes are sliced, brush olive oil all over, sprinkle sea salt and pepper and a small drop of butter to each one. Place in oven and allow to cook for 40 minutes or until tender.  Serve when done.
