With a plum tree out back, coming up with different twists on plum jam every year becomes a challenge.  I was digging around in the cupboard and found a jar of agave sweetener.  I decided to give it a try in some jam, and it came out great.  I did not let the jam boil down too much, so it was not a thick jelly, and easily poured over some pancakes for breakfast.  If you know what you are doing when it comes to canning enjoy the recipe.  If you are new to home canning, feel free to check out my more detailed post by CLICKING HERE .

2 cups plums, pitted and rough chopped
1/3 cup water
1/2 cup agave sweetener

Sterilize jars, lids and rings. Place all ingredients in a pot and slowly bring to a rolling boil. While jam is heating up stir constantly and gently smash plums. Let jam boil for at least one full minute and then pour into canning jars. Remove excess bubbles, wipe rim and secure lids and rings. Process in pressure canner for 10 minutes at 10 PSI. Remove jars from pressure canner and listen for that 'ping' that says it's sealed!  If you want a thicker jam let simmer for 10-15 minutes while constantly stirring before canning.
