Mailman hubby turned 60 this year, so the girls and I went all out with a cute birthday cake for him.  He thinks store bought frosting is too sweet, so I have have been making frosting at home more and more.  My oldest daughter is not fond of butter cream frosting, so we decided to do with a chocolate whipped cream cheese frosting for his cake.  It turned out excellent.  Not to sweet, and not to heavy on the chocolate.  This frosting is on the wet side and much lighter than the traditional cream cheese frosting.  This is not a piping frosting, it will not hold it's shape, but would make an excellent filling layer in a cake.  I highly recommend a stand mixer for this.


1 pkg.(8 oz.)  cream cheese, softened
1/4 cup butter or margarine, softened
1 tsp vanilla
1/4 cup heavy whipping cream
2 tablespoon cocoa powder
2 cups powdered sugar


Using whisk attachment, blend together cream cheese, butter, vanilla, cocoa powder and whipping cream ( slowly working up to high speed) until fluffy.  Add powdered sugar to mixture 1/4 cup at a time, be sure to mix in powdered sugar thoroughly each time.  Spoon onto cake and spread around evenly with spatula.
