I do not like bananas, but I will tear into some banana bread in a heartbeat.  With it being chocolate month, I decided to add a little bit of  extra chocolate goodness to my Chocolate Chip Banana Cupcakes, but ended up being a little short on bananas.  I decided to go ahead and make it work with just the one banana and really like the lighter banana flavor of this recipe.


Ingredients:

1 1/2 cups all-purpose flour
3/4 cup sugar
2 teaspoon cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, melted
1 mashed banana
2 large eggs
1/2 teaspoon pure vanilla extract
1/2 cup chocolate chips

Directions: 

Preheat oven to 350 degrees. Line cupcake tin with paper liners. In a large bowl whisk together dry ingredients . In smaller bowl, mix together butter, mashed bananas, eggs, and vanilla. Add banana mixture to dry ingredients and mix together. Stir in chocolate chips. Spoon batter into muffin cups. Bake until a toothpick inserted in center of a cupcake comes out clean, 20 to 25 minutes. Remove cupcakes from pan; cool completely on a wire rack.
