Taco Stuffed Pasta Shells

I love tacos and I love stuffed pasta shells.  After seeing a few recipes floating around my friends feeds on Facebook, I decided it was time to give it a try.  They turned out excellent, and I will be doing them again.  I originally boiled up 18 shells, but a couple did not survive the cooking process.  Even with 16 shells stuffed, I had some extra meat left over.  I think 1 lb of meat can easily do 20-24 shells.


18 + Jumbo Pasta Shells
1 lb ground beef
1 8 oz brick bream cheese
1 package taco seasoning mix
1/4 cup taco sauce or salsa
1/2 cup shredded cheese

Cook Pasta according to directions on box.  Meanwhile, in a large nonstick skillet over medium heat, cook beef until no longer pink and drain.  Add cream cheese and taco seasoning, cook and stir until blended.
Drain pasta and rinse in cold water.  Take large baking dish and cover bottom with taco sauce or salsa.  Stuff each shell with about 2 tablespoons beef mixture and place in dish.  I did the open side of the shell up.  Add more taco sauce or salsa to top of shells.  Cover and bake at 350° for 20 minutes. Uncover and sprinkle with cheese blend. Bake 5-10 minutes longer or until heated through and cheese is melted.

Garnish with your favorite taco ingredients such as salsa, salsa verde, sour cream, shredded cheese or hot sauce.  For added crunch, add lightly crunched tortilla shells.
