Super Fast and Easy Spicy Burritos

I make a very easy and super fast refried bean dip often normally to be used as a dipping for chips, crackers or taquitos. Recipe for bean dip can be found on the blog. Anyways one night while trying to figure out what to throw together for a super fast supper, I ran across some left over dip and tortilla shells. Instantly burritos popped into my mind, and under 10 minutes we had an amazing supper served and all were happy and stuffed.


1 can of your favorite refried beans
1 cup of shredded cheddar cheese
1 cup of medium chunky salsa
1/4 tsp of cayenne pepper
1 package of tortilla shells burrito size

In a medium size pot, pour in your refried beans and cook on medium heat until warm. Pour in cheese, salsa and cayenne pepper and stir well. Let simmer on low to medium heat. Taking your tortilla shells warm them slightly in the microwave, 15-30 seconds will do the trick.

Spread out several spoonfuls of your bean mix in the center of your tortilla shell. Taking the sides fold shell inward, not letting go, take bottom half of shell and fold upwards and then roll upward until the ends of shell are on the bottom. I usually pop them in the microwave for about 20 seconds so the cheese adheres to shell and makes them stay in place better when eating. Serve plain or with a spoonful of salsa on top. If you want it spicier add more cayenne pepper to the mix. If spicy foods are a problem you can eliminate the cayenne pepper.
