Nachos Con Pollo

One of my favorite dishes of Mexican food is Nacho Con Pollo or in English form Nachos With Chicken. It's a wonderful meal with tortilla chips covered in white cheese, sauteed green peppers and shredded chicken. I always order it when we are out at restaurants, and finally decided with this challenge to make it. Not really having a clue on how to make it, I sort of just threw the ingredients together and it actually came out quite tasty and fairly easy to make. Making this recipe I had planned on just using store bought nacho chips, but after putting the chicken in the oven I realized I was out of them, so I decided to make my own, I will explain how in directions below, but I'm sure store bought nacho or tortilla chips would work just as easily. Using this recipe I made 3 serving.





Ingredients:

3 chicken breasts; boneless, skinless
6 burrito tortillas
1 box of Velveeta Mexican cheese
1 green pepper



Pre-heat oven to 375 degrees; and place 3 chicken breast in a cooking pan with enough water to cover bottom. Cook for 20-30 minutes or until done. While chicken is cooking, cut up the 6 tortillas into wedges or triangles. Lightly spray cooking oil or rub oil on both sides of tortillas and cook for 8-10 minutes until golden brown and crispy. Cut up a green pepper into strips and place in a pan on stove. Add a small amount of butter, about a size of quarter and allow them to cook til tender. Once chicken is done cooking, take 2 forks and pull the cooked chicken apart making it into shreds and chunks. When everything is about done, dice the block of cheese and place in a microwavable safe bowl and cook for 3 minutes; stir and cook for another minute if needed. You want the cheese to be soft and as runny as possible. Mix shredded chicken and peppers into the cheese. Pile some tortilla chips on a plate and spoon out the chicken cheese mix. Top with sour cream and or salsa. Voila your ready to eat.


Save some time by using store bought tortilla nacho chips. To add a little heat, cook Jalapeno peppers in with green peppers; you can also saute some onions.
