This is a quick and easy lunch I came up with in an effort to clear out the refrigerator  I love how the cheese wilts the arugula right on the bread, no extra steps to take!



Ingredients:

2 slices bread
butter
fresh arugula
shredded cheese


Directions:

Heat frying pan over medium heat.  Butter one side of bread and place in pan butter side down.  Add arugula and shredded cheese onto bread.  Butter second slice of bread on one side, and place in pan on top of cheese, butter side up.  Check to see if bread is toasted after a couple of minutes by gently lifting with spatula and taking a peek.  When toasted to a nice golden brown flip and let cook for another couple of minutes.
