Recipe ~ Cheesy Enchilada Dip and Chips

We came across this idea for supper one night while looking at a box of hamburger helper stuff, it's great for parties or even supper time with the family. I love quick and easy meals like hamburger helper boxes but the seasoning is never just right for me. It seems it's always lacking something. So taking their idea I came out with my own version that always makes the family happy. Best of all since you use the chips to eat it with means less dishes that have to be washed. If you're like me and your dishwasher is your own hands, this can be a big plus to fixing dinner.


1 pound of ground beef
1 cup of Instant Rice
1/2 cup of Salsa
1 package of Enchilada seasoning mix
1 cup shredded cheese (we used Mexican blend)
1/2 cup white mexican cheese
Any style of Tortilla chips (we love the bite size, circle ones or the scoops)
2 cups water
1 cup milk

Cook and drain ground beef, fix your rice as directed on stove in a sauce pan. After ground beef has been cooked and drained replace back on stove and add 2 cups of water, 1 cup of milk and enchilada seasoning package. Let cook on medium heat for about 10-15 minutes, you want to cook most of the liquid out of pan. Stirring regularly to prevent sticking. Stir in your rice and salsa and let cook for another 5-8 minutes.  Add both cheeses and mix well making sure cheese have melted before serving. You can place your enchilada dip in a bowl for parties or place some on plates to serve for family dinner. Use your chips for silverware.

Add a dollop of sour cream for topping if wanted.
