Recipe ~ Cheesy Salsa Mini Meatloaves

Meatloaf is a rare treat around here, mostly because I just hate fixing it. I've always used my moms recipe but then after many years I just wanted to mix it up a bit. After searching through all my recipes, I decided to throw 2 of them together and came up with this. The meal itself was very easy to put together and everyone enjoyed it. After trying something new I always ask the same questions. Is it good? Answer: yes. Is it something you would like to eat again. Answer:  yes.  These little mini loaves were a hit.  It is easy to store the left overs to be served for lunch the next day. My son will eat just about anything so it wasn't a surprise he liked them. My partner is a little more picky than he is and I'm extremely picky; but even I liked them. With some mashed potatoes, corn and green beans, I had a complete meal done in about 30 minutes start to finish. This recipe made 12 mini loaves.


1 pound of ground beef
1/2 Cup finely chopped onions
1 Egg
12 Saltine Crackers (crushed)
1 1/2 Cups of Shredded Cheese (Mild or Medium)
1 Cup Salsa

Preheat oven to 400 degrees, take your thawed out ground beef and mix it in a large mixing bowl with the onions, egg, crackers, only 1 cup of the cheese and 1/2 cup of the salsa. Get your muffin pan and lightly spray the muffin cups. Taking a table spoon press the meat mixture into the muffin cups. I started off with 1 1/2 spoon fulls for each cup and then used the rest of the meat mixture to even the cups out. Using the back of your spoon make a small indentation in the center of each mini loaf. Place a larger cookie sheet under the muffin pan to catch if any grease that cooks out, preventing a big mess later in the oven. Place pans in the oven. Bake for 25 minutes. Pull out your mini loaves and top with remaining salsa and cheese. Replace in oven and bake for about 3 minutes or until cheese has melted. Serving 2 mini loaves to each person with our sides of mashed potatoes and veggies, everyone was full.
