Recipe ~ Cheesy Nacho Bake

This Month's Cheese Challenge is a easy one for me, as I put cheese on just about everything. I am your no fruit and barely any veggies kind of girl.  I am also very, very picky about what I eat, so much that most recipes that Bobbie shares with me,  my response is mostly Eww!! When she asked me about my ideas for this month I was so excited. Finally something I would enjoy making and actually eat. I will be honest and say this recipe is made with diced tomatoes, and yep I plucked them out while I was eating. Took about 30 minutes to prep and cook and everyone seemed to like it, as they went back for seconds. To me it was like eating nachos and a taco together in one serving.


1 pound of ground beef
1 Can of diced tomatoes, undrained
1/4 Cup of water
1 package of taco seasoning
3/4 Cup of Sour Cream
1 1/2 Cup of shredded cheese
1 Green Onion; sliced (optional)
6 oz. of tortilla chips (about 7 cups)

Preheat oven to 350 degrees. On medium heat cook ground beef until brown; and drain. Add in the taco seasoning, water and tomatoes. Stir and cook for 10 minutes on medium heat. Stir in sour cream and let cook for 5 minutes. While your waiting on the sour cream to cook into the meat mixture, line a baking dish with half of the tortilla chips. Cover chips with half of the meat mixture, top with half of your cheese. Repeat layers with chips, meat mixture and remaining cheese. Bake in oven  for 20 minutes. Top with onions if you want. I served mine with salsa to give it more of a kick.  

* Substitute ground beef with 4 chopped chicken breasts.
