Cheesy Pasta with Veggies & Sausage

True to my delay fish nature, 5 pm rolled around and hubby looked at me and asked:  What's on the menu?  As usual, I looked at him like a deer caught in headlights.  No plans, no meat thawed, completely at a loss.  After a pretty loud sigh, I headed into the kitchen and started rummaging though the fridge and cupboards and came up with this Cheesy Pasta with Veggies and Sausage.  Hubby liked it so much, he went back for seconds and thirds!

1 Hillshire Farms polish sausage rope
1 red pepper
1 tomato
1 bunch fresh spinach
1 8oz package cream cheese
1 box rigatoni pasta
chopped cilantro
1 chopped green onion
salt & pepper to taste

Prepare pasta as directed on box, drain, return to pot and set aside.  Wash spinach and set aside to drain. Cut sausage into thick julienne strips and place in large pot to brown over medium-hi heat.  You might be able to use a very large frying pan, but I find a pot is less messy and easier to stir.  Slice pepper into thick julienne strips and add to sausage to cook.  Add chopped cilantro and green onion and stir.  Cut tomato into small wedges and add to sausage along with spinach.  Continue to stir as spinach wilts, some liquid should be building up.  Roughly cube cream cheese and add to sausage and veggies and stir to melt cream cheese. Once cheese is melted, pour over pasta and stir until pasta  is coated with cheese, and veggies and sausage are mixed in.

Want to add a little kick?  Top with red pepper flakes before serving.
