Recipe ~ Cheesy Arugula Omelet

This is one of those accidental recipes.  I was starving at lunch time and went to raid the refrigerator to see what I could come up with.  Omelets are always a good way to throw a fast meal together and clear out the refrigerator.


2 Eggs
Pinch of garlic salt
Shredded cheese
Fresh (or bagged) arugula
Salsa optional


In small bowl whisk eggs, then add garlic salt and some shredded cheese and mix.  I just reached into the bag and grabbed a small handful of cheese.  Coat small frying pan with cooking spray and heat on stove top over medium high heat.  Grab a small handful of arugula and place in frying pan, and stir until it is wilted.  Reduce heat to medium and pour egg and cheese mixture over arugula.  Gently swirl pan to create a nice round shape of egg mixture along bottom of pan.  Let omelet cook until it is just runny in center, it make take a few minutes before it gets to this stage.  Take spatula and carefully fold omelet in half and gently press down.  Let the omelet cook for 1-2 minutes before flipping to cook on other side for an additional 1-2 minutes.  Slide omelet onto plate and if desired top with some salsa and some more cheese.
