Cookie Recipe ~ Peanut Butter Balls

Amanda gets the blame for this yummy recipe (as well as all the credits for photos of her treats).  It has become a tradition for her and her mom to make these every year.  Aside from spending some bonding time with each other, it is just easier for two people to make so the chocolate does not get a chance to cool down while dipping the peanut butter balls into it!


1/2 pint of peanut butter
1 Large package of cream cheese
1 1/2 boxes of confectionery (powdered) sugar
1/2 stick whipped butter
1 12oz. package of chocolate chips (I like milk chocolate)
1/2 Bar of Food Grade Paraffin Wax


Mix peanut butter, cream cheese sugar and butter together in a bowl. Roll small amounts of mixture into balls, about the size of a quarter. While forming balls melt chocolate chips and wax together in a pan on medium-low heat.  Make sure to stir constantly or the chocolate will burn and stick to the bottom of pan. Once chocolate is good and melted dip your peanut butter balls into the mix. Coat evenly all over. Dip the balls in with spoons as the chocolate will be hot. Place chocolate balls on wax paper to allow time to harden and set up. I like mine cold so I place them in the refrigerator for a couple hours and then serve on a platter or holiday theme bowl.
