Holiday Recipe ~ Honey Candied Yams

My mom loves yams, but hates when I bake them with marshmallows. I decided to surprise her one year with candied yams that did not use any marshmallows. She loved them and have become a holiday favorite for us.


1-2 yams
1 cup honey
1 tablespoon butter
1 teaspoon ground cinnamon
1/2 teaspoon lemon juice


Preheat oven to 350.  Peel yams and cut into large bite sized chunks.  In a microwave safe bowl combine honey, butter, cinnamon, and lemon juice and melt together.  I did 30 seconds on HI, stirred and did another 30 seconds on HI.  Place cut yams in 8x8 or 9x9 pan and pour honey mixture on top.  Stir yams every 20 minutes and bake for a total of 45-60 minutes.  Yams can be eaten as chunks or smashed with some of the warm honey mixed in.
