Meat Recipe ~ Green Olive & Caper Baked Chicken

This recipe is an adaptation from the family recipes of one of my best friends.  Her dad was a phenomenal cook and I loved going over for dinner.  I don't know much about the original recipe other than it called for a whole uncooked chicken, green olives and capers.  I have issues with even touching raw chicken, so I always make it with boneless skinless chicken breasts.  I hope you enjoy it as much as I do.

Ingredients:
2-3 Boneless skinless chicken breasts
1 Small can green olives
3 Tablespoon capers
2 Teaspoon olive oil







Directions:

Pre-heat oven to 400.  Drain juice from olive into medium bowl and add in olive oil.  Finely chop olives and capers and add to bowl with olive juice and mix.  Place chicken in baking dish and cover with green olive and caper mix.  Bake for 45-60 minutes or until chicken is done.  This chicken dish is a bit on the salty side, and I serve it with some white rice or unseasoned broccoli and potatoes to cut back the saltiness.
