Meat Recipe ~ Cashew Chicken

Once in a while a recipe just shows up in my kitchen,  kinda like when my mom calls and says she is bringing dinner over and to start cooking up some rice.  I was more than happy with that arrangement!  My mom has been making this dish in various forms for longer than I have have been around, and it is always a family favorite.  I FINALLY convinced her to part with the recipe.  I hope you enjoy!


2 Chicken Breasts, Diced
1 Cup Diced Onions
1 Cup Diced Carrots
1 Cup Diced Celery
1/2 Cup Cashews
3 Teaspoon Corn Starch
3 Tablespoon Olive Oil
Salt and Pepper to Taste

15 drops Lemon Oil
Substitute roasted peanuts for cashews
Cayenne Powder


Mix diced chicken with salt, pepper and corn starch.  Saute chicken in pan over medium high heat for roughly 5 minutes or until meat is done and set aside. Individually boil carrots, onions and celery for about three minutes each, drain and set aside.  Once all ingredients are cooked, mix together and add in cashews.  Add lemon oil if you want a lemony taste, or sprinkle with cayenne powder to give it some kick.  Serve over rice or pasta.
