Meat Recipe ~ Taco Salad Rice Bowl

Some times the easiest dishes are just the tastiest!  Once again I totally winged dinner and after pulling out everything I happened to have on hand for tacos, I wanted some rice to do with dinner.  My end result....Taco Salad Rice Bowl!

1 lb ground beef
1 pouch taco seasoning mix or 1/2 cup salsa
1 can black beans
1 can water
cooked rice

Other favorite taco toppings such as:
chopped olives
hot peppers
shredded cheese
sour cream
chopped onions


Prepare rice as directed on packaging.  While rice is cooking, open up beans and drain out as much liquid as possible.  Add beans to small pot on low heat and add in a can of water.  Let beans simmer while browning ground beef.   Drain off excess oil when ground beef is fully cooked.  Add Taco seasoning mix as directed.  If you do not have taco seasoning mix, add 1/2 cup or salsa and simmer for 5 minutes.  Once rice is done, start layering up your Taco Salad Rice Bowl.  Rice, meat, beans, lettuce, tomatoes, salsa, or any of your favorite toppings.  Add some crunch with slightly crushed tortilla chips.
