Meat Recipe ~ Slow Cooker Pork Ribs & White Beans

I love that even on the hottest days, I can make a nice hot meal without heating up the house too much.  I had a small rack of boneless ribs that needed cooking and started scrounging around my cupboards for what I could make.  I found some white beans, had some potatoes on hand.  Voila!  I added some salad and some flour tortillas ~ dinner was done!   You need a large slow cooker for this.  Mine is roughly  5 quart slow cooker.

Ingredients:

2 Cups white beans, rinsed
Small slab boneless pork ribs
1/2 Cup soy sauce
3 Cups Water
4-6 Baking potatoes




Directions:

Place beans in slow cooker and then put meat on top.  Add soy sauce and water.  Cover and set on low for 4-5 hours.  At 4-5 hour mark, wash potatoes and cut into large chunks.   Stir beans and meat.  Meat should be falling apart into chunks or almost falling apart.  Stir in potatoes and add more water if necessary.  Continue cooking for 3-4 hours, until potatoes are cooked.   Stir before serving to break meat apart.
