Meat Recipe ~ Pork Loin Roast

One dish meals are a favorite of my girls....less dishes to do.  I like them because there is very little  prep work involved.  One of my personal favorite dishes is a pork loin roast.  There is very little prep time, the house smells amazing while it's cooking, and I'm not in the kitchen slaving away.  It is also a great way to help warm up the house in winter.


Pork Loin Roast
2 Tablespoon butter or margarine
4-6 Baking potatoes
2 Carrots
1/4 Onion
Steak Seasoning


Preheat oven to 400 degrees.

Rinse off and pat dry pork roast.  Place roast in 9x11 baking dish and smear butter on top.  Rinse and peel potatoes and carrots.  Cut each potato into 8 chunks and cut carrots into roughly 1 inch chunks.  Cut onion into chunky slices, roughly 1/2 inch thick.  Place potatoes, carrots and onions in backing dish, surrounding the roast.  Sprinkle steak seasoning across top of meat and veggies.  I ran out of aluminum foil, so I just slammed the dish into the oven for 2 hours.  Remove dish from oven and set on counter to rest for 15 minutes.  Remove strings from meat, slice and serve with the potatoes, carrots and onions.  Great flavor with very little work.
