Meat Recipe ~ Easy Chili

I must have done something right with this one, hubby went back for three servings!  Here is a quick and easy chili to make if you happen to have some left over pork in the fridge or freezer.

2 cans pinto beans
1 cup left over  pork chunks
2 carrots peeled and diced into small bite sizes
1 large potato peeled and diced into small bite sizes
several celery stalks washed and diced into small bite sizes
1/2 large white onion diced
2 cans water
1 teaspoon dried parsley flakes
salt and pepper

Grab a large pot and put it on the stove set on a medium heat.  Place all ingredients in pot and bring to a simmering boil for 30 minutes stirring occasionally.  If you want to add some heat, add some cayenne powder, or jalapeno peppers.  How easy is that?

Cooking Tip:  Hate stringy celery?  Take your peeler and run it along the back and sides of the celery stalk to easily remove most of the tough 'strings'.
