Meat Recipe ~ Balsamic Glazed Chicken Stir Fry with Modena Blaze

This is really a two part recipe.  I buy boneless skinless chicken breasts at a club store, so there is no way I can cook it all up in one day.  I portion it out into freezer bags two chicken breasts each and toss them into the freezer for later use.  I decided to throw some Blaze Glaze into the freezer bag with the chicken so it would marinate as it thawed.  The chicken came out fantastic after I baked it in the oven.  I was feeling creative and has some veggies I needed to use up, so I went ahead and made a stir fry with it.  It turned out fantastic.  Hubby, who said he does not like Balsamic Vinegar, love this dish and had a couple of servings.  Also, there were no leftovers as the girls and I dug in with gusto as well.

So far I've had a blast with the Blaze Glaze and Fig Fruity Glaze.  I've been adding it to salads for an extra kick and  drizzling it over different pasta dishes.  I'm just waiting to have one bottle go empty before I break into the Strawberry Fruity Blaze.  Blaze Glazes have a nice tang to them without being to acidic, and the fruity flavor in the Fig Fruity Blaze is a nice surprise.

Balsamic Glazed Chicken Stir Fry

2-3 boneless skinless chicken breasts
1/4 cup Blaze Glaze
2 teaspoon parsley flakes
2 carrots, peeled and diced into small bite sized pieces
1 cup broccoli florets
1/2 medium onion, sliced
6 celery stalks sliced at a thin diagonal
olive oil
salt & pepper

Marinate chicken in Blaze Glaze for a couple hours or overnight.  Preheat oven to 350.  Place chicken in baking dish and sprinkle on parsley.  Bake for 45-60 minutes or until chicken is done.  While chicken is baking prep veggies and cook rice or pasta as this goes well with either one.
