Frozen Recipes ~ Freezer Meatballs

Meatballs are a favorite around here, but the cost of them just kills my budget.  I figured since I buy hamburger by huge amounts at a time, I may as well make my own!  These turned out fantastic and are handy for nights I have no idea what to make for dinner.

1 pound ground beef
1/2 large onion
1-2 cloves garlic
3/4 cup Stove Top Stuffing
2 eggs
1 Tbsp Worcestershire sauce

Line cookie sheet with wax paper.  Combine all ingredients in a large bowl and mix well.  I found getting down and dirty mixing ingredients with my hands was the easiest way to do it.  I used a rounded tablespoon of mixture, and then rolled it into a ball, about an inch across.  Place meatball on the cookie sheet.  Continue forming meatballs and placing on cookie sheet until out of mixture out you run out of space on the cookie sheet.  Loosely cover meatballs with another sheet of wax paper and place in freezer for 1-2 hours.  Portion out frozen meatballs into labeled freezer bags for later use.  Can be cooked from frozen or thawed.  For my spaghetti and meatballs, I left them on the counter for 30 minutes to thaw, then tossed them into a frying pan for 15 minutes, turning them to brown on all sides.
