Frozen Recipes ~ Freeze Ahead Meatloaf

I have no idea where, but a while ago I read something abut using Stovetop Stuffing in meatloaf instead of crackers or bread crumbs.  I though this was a fantastic idea, all the seasonings are already mixed in, so I gave it a whirl with a freeze ahead meatloaf.

1 pound lean ground beef
1/2 large onion diced
1 cup Stovetop Stuffing
2 eggs
2 Tablespoon Soy Sauce
Few drops liquid smoke
Salt & pepper to taste

Coat a bread loaf pan with cooking spray.  Combine all ingredients in large bowl and mix thoroughly.  It's best to get down and dirty and just mix it with your hands.  Place mixture into loaf pan, cover with foil and freeze.  This can be taken directly from the freezer to the oven for cooking!  My oven knocks this out at 350 degrees for 90 minutes.  I did remove the meat loaf from the pan after it was done cooking so it was not sitting in the hamburger grease.  Hubby and my oldest loved this.  My youngest was busy fussing about the onion, but still ate it.  I did not add any salt or pepper, and really did not need to with all the flavor that was loaded in thanks to the stuffing.
