Farmer's Market Recipe ~ Zucchini & Sausage over Parmesan Pasta

I love having some pre-cooked sausage in the freezer and some fresh veggies on hand.  It makes for a fast and easy dinner when it is stupid hot outside.

1 yellow zucchini
1 green zucchini
2-3 basil leaves
favorite pre-cooked sausage or kielbasa
lemon pepper
spaghetti noodles
olive oil or butter
1/4 cup shredded Parmesan cheese


Cook pasta according to directions on packaging.  When pasta is done cooking, drain and return to pot with heat off.  Drizzle some olive oil or a small pat of butter onto pasta and toss until pasta is lightly coated.  Add Parmesan to pasta and toss until combined.   Cut zucchini and sausage into bite sized pieces and rough chop basil.  Heat frying pan with some cooking oil to med-hi heat, and add basil, sausage, zucchini and a couple pinches of lemon pepper.  Cook until veggies are cooked through and sausage is heated, roughly 15-20 minutes.  Serve pasta on plate or bowl and top with zucchini and sausage.
