Farmer's Market ~ Basil Country Potatoes

With a new month comes a new food challenge!  This month is Farmer's Market.  This can include ANYTHING found at a farmer's market, so expect a wide variety from the all us bloggers participating this month!

My first recipe for this new month, Basil County Potatoes.  Love this for the simplicity and ease of cooking.  One of my daughters friend spent the night a few years ago, and I make potatoes for breakfast the next morning.  It has since become a tradition for make a serving for her once a year or so as she has NEVER quit talking about them and always asking my oldest to ask me to make them for her again.

2 red potatoes cut into bite sized cubes
1/8 cup chopped red onion
1 teaspoon fresh chopped basil
1/2 teaspoon lemon pepper
1 1/2 tablespoon olive oil


Place all ingredients in a bowl and mix.  Potato chunks should be coated with olive oil and lemon pepper.  Let marinate in fridge for 15-30 minutes.  Preheat pan over med-high and add marinated potatoes.  Stir occasionally to prevent burning, roughly every 3-5 minutes, you are looking to have a nice golden brown on the potatoes.  Look over potatoes to make sure they are getting turned to an uncooked side after you have stirred them a couple times, there is always one in my pan that ends up on the same side all the time.   Serve and garnish with a a little fresh basil, ketchup, sour cream, cheese, gravy or even an egg!
