Meatless May ~ Easy Cornbread

I love cornbread.  It is so easy to make, and so versitale with all the different foods that can be added to it to make a sweet cornbread, or a savory cornbread, the possabilities are endless.  I found this easy recipe on the back of my yellow corn meal bag, and it has beern a hit everytime I've made it.

1 cup yellow corn meal
1 cup all purpouse flour
4 tablespoons sugar
4 teaspoon baking powder
1 teaspoon salt
1 cup milk
1 egg
1/4 cup vegetable oil

Preheat oven to 425.  In large bowl mix dry ingredients together.  Slowly add in milk, egg and oil.  Mix untill batter is almost smooth.  Pout into a greased 6x6 or 8x8 pan and bake for 23-25 minutes.  This is a very light, fluffy and crumbly cornbread.  Slather on some butter (CLICK HERE to see how easy it is to make your own butter) while still warm and enjoy!
