Meatless May ~ Cucumber Sandwich

Check out this fast and easy cucumber sandwich that is just awesome on a hot day.  It's only 4 ingredients, what could be simpler than that?

Garlic Salt
Sliced Bread

Wash and pat dry your cucumber.  I prefer the seedless japanese cucumber for this.  No seeds and the skin is tasty without being tart.  Slice cucumber into circle roughy 1/4 inch thick.  Spread mayonaise on both bread slices, then sprinkle a light layer of garlic salt on top.  Place cucumber slices on bread and put second slice of bread on top.  If you are serving to guests as a finger food, cut into small squares around 1.5 inches, and put a tothpick through the top to hold together.  I love this for a fast cool lunch during summer and just chow down.  Darker breads suck as pumpernickle, rye, or a whole grain bread give this some extra flavor and texture.
